Thai red curry paste

The Thai name for Red Curry literally means "Hot Curry". It is very similar to the green curry but as the name suggests, red chillies are used, giving its red colour. In the west, green curry is normally the hottest style but back in Thailand the red ones are hottest.

In our red curry paste we use the same quantity of chillies as in the green curry paste. Because the red chillies we use are a little milder than our green chillies, this paste is slightly less hot than the green curry paste.

The paste is made from fresh ingredients such as red chillies, lemongrass, galangal, garlic and ginger. Ground with some dry spices and dried fish, this jar of paste is enough for 6-8 portions depending on how much you like to put in your curry.

To make the curry you will also need a tin of coconut milk and some meat / vegetables of your choice. We would recommend using chicken or seafood for this particular dish. There are easy to follow basic instructions on the side of the jar and following these will give you a medium-hot curry.
