Thai Mussaman curry paste

Mussaman (or Muslim) curry is a Thai curry with Islamic origin. A very popular choice in the west due to its mildness. The ingredients have a slightly Portuguese influence and it is similar in concept to the Goan Vindaloo (without the heat). It contains all the typical fresh Thai ingredients you would expect but it also has lots of earthy spices such as nutmeg and cloves. Normally prepared with beef or lamb, the dish traditionally always contains potato.

The paste is made from fresh ingredients such as green chillies, lemongrass, galangal, garlic and ginger. Ground with some dry spices and dried fish, this jar of paste is enough for 6-8 portions depending on how much you like to put in your curry.

To make the curry you will also need a tin of coconut milk and some meat / vegetables of your choice. We would recommend using beef or lamb and a potato for this particular dish but it is also great with salmon or scallops.

There are easy to follow basic instructions on the side of the jar and following these will give you a mild to medium curry sauce.
