Keralan curry powder (medium)
This is the blend used to make our Keralan curry sauce. Using plenty of spices typical of South Indian cuisine such as fenugreek and curry leaves, it is very versatile. Great for chicken or fish curry, excellent with vegetables and equally good with paneer and spinach.
Cooking a great curry with these spices is easy. Instructions come with the packet but is simply a case of cooking the spices with onions and tomatoes (maybe a dash of coconut milk) and adding whatever you like to it.
