Spanish marinade with Moorish influence. A typical marinade from the South of Spain especially around Andalucia. Main flavours are smoked paprika, fennel and saffron. Commonly used to marinate pork or lamb before grilling or BBQ-ing but also great as a Spanish style pesto stirred through pasta with chorizo and shredded cabbage.
