Carrot pickle
This super tasty carrot pickle with aromatic Indian spices, chillies and fresh carrots is so fresh and delicious! The carrots are chopped so as to be tiny but still with a little crunch. The spices are freshly ground and added in 3 different stages. It's a lot of work for such a simple thing, which is exactly why it doesn't taste simple. A rich depth of flavour in every bite, you may notice mustard seeds, curry leaves, asafoetida, ginger and turmeric. Great with a curry, with popadoms, daals or even in a sandwich.
