Penang curry paste

A wonderfully rich, creamy and nutty Malaysian curry. Penang neighbours Thailand and there are obvious similarities to the Thai curries, however, the Chinese-Malay influence lends star anise to the recipe. One of the main ingredients really gets our monkeys going wild at Spicymonkey Towers; roasted monkey nuts are a bit of a delicacy in the factory. It is with great difficulty that we ensure some of the nuts make it into the curry paste.

The paste is made from fresh ingredients such as green chillies, lemongrass, garlic and ginger. Ground with some dry spices and dried fish, this jar of paste is enough for 6-8 portions depending on how much you like to put in your curry.

To make the curry you will also need a tin of coconut milk and some meat / vegetables of your choice. We would recommend using seafood for this particular dish. There are easy to follow basic instructions on the side of the jar and following these will give a medium strength sauce.
