Kabsah is a spice mix used in Saudi Arabia and neighbouring gulf states. It is a variety of Baharat which uses delicious ingredients such as dried limes, saffron and dried pomegranate. It is traditionally used by nomadic Bedouin tribes to add flavour to basic rice and meat dishes which would normally be cooked in small pots in their tents. One of the most famous Saudi dishes uses this spice mix and is not surprisingly called Al-Kabsah. This wonderful meal is basically boiled rice with vegetables (most commonly onions, peppers and carrots) and meat. The meat is first fried and then boiled. The meat stock is used to cook the vegetables with the spice mix and the rice is added to the pot with the vegetables until cooked. The final dish can be garnished with pine nuts and is normally served with hot sauce such as 'Shattah' which is very similar to Harissa. |
