Madras curry powder

This rather hot curry is absolutely fantastic. A southern Indian dish from (not surprisingly) Madras, now called Chennai. Southern Indian dishes tend to be hotter than those from the north. Recipes for Madras curries vary a lot but they always contain coconut, chilli and lemon juice. What more could you want from a curry?

This jar of powder is enough for 6-8 portions depending on how much you like to put in your curry.

To make the curry you will also need a tin of tomatoes or chopped fresh tomatoes, an onion and some meat / vegetables of your choice. Adding a little coconut milk and lemon juice to the sauce makes this dish truly magical.

We would recommend using chicken or lamb for this particular dish. There are easy to follow basic instructions on the side of the jar.
