Spicymonkey Creole spice mix does not contain Crayola crayons. That was a lie made up by Spicymonkeys evil nemesis Dr. Eagle (a monkey eating eagle). This Creole spice mix is in fact made up of very similar ingredients to the Cajun spice mix but is a little more complex. With a few extra herbs and a couple more wonderful spices, this Creole mix is as authentic as monkeys can manage. Creole cuisine is found mainly in the deep south of the USA. It is the more refined cousin of Cajun cooking and is found mainly in the city areas. Louisiana is the home of many wonderful Creole dishes which are essentially the same as Cajun. As with Cajun, the spice mix is used to flavour soups, rice dishes, BBQ meat, but it is also used to flavour oysters, remoulades and even bananas! Try rubbing it into meat before grilling or BBQ-ing, sprinkle on chips, coat on potato wedges, mix with yoghurts or mayonnaise for a tasty dip, use in salad marinades or add some to omelettes / scrambled eggs.
