A wonderfully rich, creamy and nutty Malaysian curry. Penang neighbours Thailand and there are obvious similarities to the Thai curries, however, the Chinese-Malay influence lends Star Anise to the recipe. One of the main ingredients really gets our monkeys going wild at Spicymonkey Towers; roasted monkey nuts are a bit of a delicacy in the factory. It is with great difficulty that we ensure some of the nuts make it into the curry paste. Spicymonkey Penang Curry paste is homemade and is prepared in much the same way as the Thai curries. Fry the paste in a little oil, add coconut milk, then any meat, fish or vegetables you like and simmer until cooked. Adding roasted nuts will add an authentic touch to the dish. Serve with rice or noodles. Pricing £4 per jar (approx 150g - 8 servings)
