Beautiful beaches, reggae music, exotic fruits, cheerful people; are all what you expect to find in Jamaica. Our monkeys went on a reccy to Jamaica to see what all the fuss about. They found Jerk-shacks on almost every road and we very nearly lost Mikey Monkey when he nearly combusted following a Jerk Chicken frenzy. These small local fast-food places are for people to fill up with Jerk spiced food and we are currently planning the installation of a Jerk-shack at Spicymonkey Towers, especially for our monkeys. Jerk spice is used to season all manner of meats, fish and vegetables. Traditionally, Jerk recipes always contain three main ingredients; Scotch bonnet peppers (one of the hottest kinds of chilli pepper!), allspice (from the pimento berry - native to Jamaica) and thyme, which is a very common herb used in Jamaican cuisine. Spicymonkey Jerk sauce is great for spreading over meats and veg before or after cooking. Marinate anything before cooking to spice it up - Jamaican style. Jerk is perfect BBQ food. Spicymonkey recommends marinating any meat / veg and leaving in the fridge overnight. Then grill on a BBQ until cooked. The skin should be blackened slightly and quite spicy!
