"Jhal-frezi" - means dry fry. Its an Indian type curry in which marinated meat and vegetables are quickly fried and then cooked until the sauce has reduced to a thick, dry 'gravy'. Spicymonkey Jalfrezi is a medium to medium-hot curry which is excellent with any meat and/or vegetables you like. To make a Jalfrezi simply coat the meat (if using) with the required amount of spice mix and leave to marinate for a couple of hours (or overnight in the fridge). Then fry a chopped onion in some hot oil until it softens. Now add the marinated meat and/or vegetables and stir fry for a few minutes. Next, add a tin of chopped tomatoes and bring to the boil. Cover the pan and simmer for about 20 minutes. Remove the lid and boil until the sauce reduces to a thick 'gravy'.
