The monkeys at Spicymonkey Towers have never been to the south of the USA, where the Cajun originate. But that's not going to stop them from enjoying a hearty, rural and spicy seasoning. The rural cousin of Creole cuisine, Cajun food is basic, spicy, but very very tasty.

It's an all-purpose blend which has many uses: -

Rub into meat before grilling or BBQ-ing, sprinkle on chips, coat on potato wedges, mix with yoghurts or mayonnaise for a tasty dip, use in salad marinades or add some to omelettes / scrambled eggs.

A popular traditional use for Cajun spice is to make Jambalaya. This is a risotto type dish with a tomato based sauce, containing prawns (shrimp), chorizo (or any spicy smoked sausage), chicken and lots of peppers. Almost the perfect meal. Mmmmm.

Cajun Spice mix also imparts a fantastic southern flavour to rice and soup dishes. Gumbo is a popular seafood soup which is flavoured with Cajun spice.
