Berbere (pronounced ber-ber-ray) is an Ethiopian blend of spices, not to be confused with the Moroccan Berber spice mix. It is quite hot and in Ethiopia they use it in just about anything. An aromatic peppery spice mixture which includes red pepper, garlic, cardamom, coriander, fenugreek as well as other spices. The spice is used in soups and stews, and for making a sauce. It can also be used as a rub for meats and sprinkled atop salads, chips, potato wedges, yoghurt dips etc. To make Ethiopian hot sauce (Berbere Awaze) just stir a little water into the spice mix until you get a thick sauce. This can then be used as a marinade for meats and vegetables. Pricing £4 per jar (approx 100g)
